THE WELL STOCKED KNIFE KIT
Whether you keep your knives on display, in a knife block or wall magnet, or store them in a drawer, remember that good, sharp, balanced knives are an absolute must for every cook. A good Chef knife will do 80 to 90% of all of your cutting needs, and good knife skills will greatly reduce the number of kitchen gadgets cluttering up your storage space.
Also important is that you should avoid cutting on hard surfaces, such as granite or glass, as it quickly destroys the edge of your knife Learn to use a honing steel to maintain your edges between sharpenings.

It’s always a good idea to make certain your cutting board is stable while cutting and chooping. To insure this, you can place a square of plastic, mesh shelf liner under your cutting board, or double folded damp paper towels.
